Corn Casserole #47692

I got this recipe from my mother-in-law. We have this every year at Thanksgiving. I always have to double the recipe.

6-8 servings
change recipe to:
US Metric

55 minutes
(10 min prep, 45 min cooking)
1   box Jiffy cornbread mix
1   can whole kernel corn (drained)
1   can creamed corn
 1/2   cup melted butter or margarine
 1/2   cup sour cream
1. Mix above ingredients in casserole dish and bake in a 350* oven for 45 minutes, or until set.
2. Enjoy!

This was fabulous! So easy to make - tastes a lot like those corn souffle that would have you separating eggs all night, but the texture on this is even nicer because of the cornbread mix (actually I used the corn muffin because I couldn't find the corn bread). Smelled heavenly while cooking it too. :) I did season it a bit (because we like everything seasoned!). I added some salt, a dash of cayenne pepper, Lawry's seasoned salt, and a dash of onion powder. This recipe is a keeper! Thanks Dawn!!
